Honey Coffee Cake

The original recipe is actually a loaf but this is a good twist to it. It is a good combination of tangy, allspice and a bit of coffee.

- 1/3 c. butter soften
- 1 c. sugar
- 2 eggs
- 1/3 c. honey
- 1 tsp. grated lemon rind
- 1 tbsp. lemon juice
- 2 1/4 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. allspice
- 1/2 tsp. ginger
- 1/2 c. brewed coffee
- 1/2 c. walnut chopped (optional)
Preheat oven to 350 degrees. Grease 9X13 pan.
Mix sugar and butter until its fluffy. Add eggs to the mixture. blend well.
In another bowl, sift together dry ingredients: flour, salt, baking powder, baking soda, cinnamon, cloves, allspice and ginger.
Mix in coffee to the dry ingredients.
Finally add both mixture together thoroughly. mix in walnuts.
Pour in mixture into pan. Bake for 45 to 50 minutes.
Let it cool before serving.
