Hello there! Here we are again featuring another exciting recipe from the book that was shared last week. I never made this recipe before but it actually turned up good. It is one of those types of cakes that you can eat with coffee. I know, I know. It is redundant since coffee cake paired with coffee. However, the spice in the cake actually balances it out. You can also use tea instead. Whatever hot beverage you chose, it will compliment it. Try this during your merienda or afternoon tea. You will not regret it.
Honey Coffee Cake
The original recipe is actually a loaf but this is a good twist to it. It is a good combination of tangy, allspice and a bit of coffee.
Ingredients
- 1/3 c. butter soften
- 1 c. sugar
- 2 eggs
- 1/3 c. honey
- 1 tsp. grated lemon rind
- 1 tbsp. lemon juice
- 2 1/4 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. allspice
- 1/2 tsp. ginger
- 1/2 c. brewed coffee
- 1/2 c. walnut chopped (optional)
Instructions
- Preheat oven to 350 degrees. Grease 9X13 pan.
- Mix sugar and butter until its fluffy. Add eggs to the mixture. blend well.
- In another bowl, sift together dry ingredients: flour, salt, baking powder, baking soda, cinnamon, cloves, allspice and ginger.
- Mix in coffee to the dry ingredients.
- Finally add both mixture together thoroughly. mix in walnuts.
- Pour in mixture into pan. Bake for 45 to 50 minutes.
- Let it cool before serving.
