Japanese Style German Potatoes

A Japanese pub snack that was discovered generations ago. Few simple ingredients combined together creating a flavorful dish. It's actually comparable to the bacon cheese fries but without the cheese.

- 2 medium russet potatoes fingerling size cut
- 2-3 bacon slices
- 1/4 cup onion sliced
- 1 tbsp. soy sauce
- 1 tbsp. butter
- salt & pepper for added flavor
- oil for deep frying
- 1 tbsp. sweet rice seasoning mirin
sliced potatoes close to inches. Rinse in cold water and pat dry.
prepare fryer. Add oil and turn the stove on in medium heat.
Add potatoes as soon as little bubbles develop. The way to check is sticking a bbq stick in the bottom of the fryer.
Turn fryer to high heat. While potatoes are frying, Cook onions in the saucepan on medium heat. Cook for a few minutes.
Add bacon and cook it until it turns light brown. Remove the rendered bacon fat from the pan.
Use a wire strainer, take potatoes out of the fryer and transfer it to the saucepan.
Add the rest of the ingredients: soy sauce, butter, and a dash of salt and pepper.
As an option, add some mirin to balance out the saltiness and sweetness.
Serve immediately.
