Soy Fried Chicken Wings

Inspired by the Japanese melodrama/food show Midnight Diners featured on netflix. It featured a japanese fried chicken dish that is pretty much a counterpart of battered chicken found in Chinese and Korean street food. Brief history of karaage dates back during edo period when tempura came to being. Portuguese came to the Japanese shores in 16th century and introduced the method of frying to the natives. Even though Karaage is easily made at home, it can be seen during festival like the “Tanabata” or Star festival wherein food vendors serve finger food.

 

Soy Fried Chicken

I thought about using chicken thighs for this recipe since its easier to nibble but I love Chicken wings as well.  Furthermore, the  amount of potato starch used in the show is probably not as much compared to my recipe. I will use make another batch of this soon using the boneless chicken thighs.

Soy Chicken Wings

Double fry soy chicken wings results into a crunchy outer layer and juicy interior. A good alternative appetizer for a sunday game or weeknight dinner.

Ingredients
  

  • 4 lbs chicken wings
  • 1/2 c. soy sauce
  • 1 1/2 c. potato starch

Instructions
 

  • In a mixing bowl (any marinating container) mix wings and soy sauce evenly. Cover and place in fridge for overnight. Check and turn every once a while.
  • Pull from fridge, transfer chicken into another container and add half a cup of the potato starch and mix well.
  • Place other 1 cup potato starch in separate bowl. coat each chicken wing and place it back in fridge for 30 minutes.
  • Heat oil to medium high. fry until lightly golden. Let it cool.
  • Heat oil to high and place wings back and fry until each has a medium golden color. Internal temp is usually above 200 F.
  • Serve immediately with favorite sauce
